Beschreibung
The Primo Oval Large Rotisserie Kit is the rotisserie made for the Primo Oval Large. It is size specific, as every Primo rotisserie is, so this one belongs to the Large and no other grill in the range.
The cuts that suit a spit are the ones with fat to give. Pork shoulder, picanha, leg of lamb, whole birds and rolled roasts all improve under constant rotation, because rendering fat travels across the surface rather than falling away and the exterior takes on colour uniformly instead of in patches. The result is even cooking without opening the lid, which on a ceramic grill matters more than it does on a kettle, since every look inside costs heat you spent time building.
Set the fire to one side, put a pan under the load to catch drippings and keep flare-ups down, and pay attention to balance before you start rather than after. A centred, well-trussed roast turns quietly; an off-centre one announces itself immediately.
Built for the Primo Oval Large ceramic charcoal grill. The Primo 3-sided rotisserie basket and the Primo oval rotisserie basket both ride on it for food that will not sit on a spit, and a Primo half drip pan for the Oval Large goes underneath.
